Beet the Heat

Pin It (Oh man, I love that title.)


So my husband made some beet soup the other day. I really had no idea what to expect. I love beets, but this soup looked a bit suspicious in my Williams-Sonoma Soup Cookbook. It's supposed to be served cold (we warmed in up) and with feta on top (we skipped that), but it just so happened it was delicious. The dill really compliments it. And it has like 4 ingredients. The most difficult part of this recipe is waiting for the beets to roast for over an hour in the oven.

I can't wait to make/or have husband make more recipes from that cookbook (did I mention he also has fantasies of being a housewife? Take a number, little buddy). Anyway, there's also an avocado soup in there too.
