Pork Chops in Tomatillo Sauce

The other night, the husband made an awesome roasted tomatillo sauce, and decided to use it on some pork, since we've already done chicken. He pan fried the pork chops first, and then covered them in the sauce and baked them. They were tasty. We agreed this would have been better with a fattier cut of pork, something you can cook slowly for longer, but that's for next time.

I made some swiss chard on the side, and we had his delicious home-baked bread. Another hearthy, and simple peasant meal.
