Cauliflower Soup: Nice and Simple

Pin It On Tuesday evening this soup came together in 30 minutes. And it was good!

Cauliflower Soup
1 head of cauliflower (medium size) chopped into chunks
1/2 white onion, chopped
3 garlic cloves
3-4 cups of chicken stock
1/2 cup of dry white wine
1/2 of heavy cream, more if you want it creamier
salt and pepper
olive oil

1) Saute onion and garlic in the olive oil for about 5-6 minutes, until translucent.
2) Add chicken stock, wine and seasoning and cook for about 20 minutes.
3) Puree, and add cream and cook for an additional 5 minutes. Taste and adjust seasoning.

Enjoy with hearty bread. It's a simple soup, so the bread is important.
