Fancy Bean Series: Black Beans with Tomatillo

It's official. I have given my canned beans entries a title. The Fancy Beans Series. I think it sounds classy. As you may recall, although I haven't posted on the subject lately, I like opening up a can of beans, and making a meal out of it.

A few nights ago, I was too tired to cook, so out came a can of black beans. I always have many cans of beans around. Not only for disaster preparedness (because you have to be prepared folks), but also because of laziness. To my beans I added homemade tomatillo salsa, cumin, oregano, cilantro, salt and pepper, and  heated everything up for a good five minutes. Then, I served the beans over a bowl of brown rice (the husband made a batch for the week), and topped everything off with a nicely ripe avocado.

Unfortunately, it took me longer to wash my dish, pan, cutting board and utensils than it took to make and eat my dinner. But, I say it was worth it.
