Fancy Quesadillas

I saw this recipe in an Everyday Food magazine, and knew right away I had to eat it. That day. So that afternoon, I went shopping and picked up prosciutto, gruyere cheese and tortillas. I picked watercress from our garden, a substitute for the arugula used in the magazine, and I was set.

What followed were some delicious quesadillas. Fancy, tasty, and considering there's lots of green in them, good for you. Just make sure to toast the tortillas well, and you got yourself a nice mid-day snack, or a light dinner.
