Leftovers: Starring Patty and Potatoes

With meat and potatoes left over from the previous day's sausage fest, on Monday I was able to throw together a quick meal. I formed patties with the meat, and fried them up. Using the same pan, I sauted the potatoes, after cutting them up in quarters. Then I topped the potatoes with tomatillo salsa. Oh, and there was oven roasted zucchini. Yum zucchini, I can eat you all the time. But no more than three times a week. Because moderation is key.
