The Salad Series Continues: Leftovers Salad

Sure there's been a little break in my commitment to the salads. But, like all good relationships, this one needed a break. And when we finally had our salad on Tuesday, we were hungry for it, we missed it, and it felt like old times. We ate a whole head of lettuce between the two of us.

The salad was topped with a number of leftover ingredients from the fridge. White beans the husband made, roasted beets, and an avocado. I also whipped up my delicious mustard dressing, and plenty of it, since I plan to use it again this weekend.

With roasted vegetables on the side, this healthy meal made me feel immediately thinner.
