Super Nachos for Marathon Wire Watching

I try not to keep tortilla chips in the house because if I have some around, I am always tempted to make nachos. And then I eat all the nachos. And drink beer. And sit and watch TV. It makes for a fairly unproductive evening.

Last week we watched five episodes of The Wire in one night. A school night! That, my friends, is dedication. And that called for a whole lot of nachos. Sure we felt a little gross from watching so much TV in one night, but, not from the nachos. I used fresh ingredients like queso fresco, instead of the processed yellow, semi-liquid cheese, and that kept things light.
Super Nachos
1 bag of tortilla chips (make some effort to buy these from the Mexican market)
1 can of chili beans
1/2 can of black olives, chopped
1 small can of pickled jalapeño, sliced
queso fresco, crumbled, however much you like
green onions, sliced
cilantro, chopped

Top tortilla chips with all the ingredients, except cilantro, bake at 350 degrees for about 15-20 minutes. Sprinkle cilantro on top. If you like, add more salsa as well.

Make sure to share.
