Last weekend we decided it was time again. Time for sausage-making. Time for grinding spices, and meat. Time for deliciousness.

We looked at several recipes, and decided to combine a couple. The spices were great, considering that bratwurst is a relatively mild-flavored sausage. But, we definitely need to add more fat next time around. These brats are perfect if you're watching your weight, looking ahead to swimming pools and beaches. It's nice and lean. At least that's my marketing strategy for it.

The other night we cooked some up and it passed our taste test. I'm including the list of our spices below.

For 10 lbs
We used 8 lbs of pork and pork fat, shoulder and 2 lbs of veal

1 tbsp mace
5 tbsp salt
1 tsp ginger
1 tbsp nutmeg, freshly ground
2 tbsp pepper, freshly ground
2 tbsp mustard seeds
2 tbsp mustard powder
1 tsp caraway seeds
1 tsp dried marjoram
1/2 tsp allspice
7 cloves of garlic
