It's nice to have leftovers. You can be lazy and just reheat for a quick meal, or you can take your time and make a whole new meal. This dinner was a sort of compromise. The husband took his time and made rice with beans and fried plantains. I had the easier job of cutting up our leftover steak from the previous evening into thin strips and sauteing it with onions and roasted bell peppers.
The grilled steaks were a bit too dry for us, so sauteing the meat with the vegetables revived it, adding juices and lots of great flavor. This made for a tasty taco filling.
