I tend to save ribs for parties, when it's not just the two of us. But I saw this small rack of pork ribs and couldn't pass them up. Besides, there's no reason the husband and I can't eat ribs alone, with baby potatoes and a bottle of Pinot Noir. And just as I thought, we managed.
I didn't use any recipes here, but I do have a few tips:
1) Rub the ribs! A dry rub the night before will infuse your meat with lots of flavor. I used salt, garlic, cumin, paprika, mustard powder and Cayenne pepper.
2) Boil your potatoes before throwing them on the grill. It speeds up the process, and you're guaranteed to have them cooked through.
3) Make a salad. This meal needs some greens, and we had a delicious salad from our yard, unfortunately, it didn't make it on camera.
