Last week, when I had leftover pasta, I decided to use these fresh Highland Park eggs and make little frittatas in the muffin tin. You can use whatever you have in the fridge. Here I have roasted peppers, olives, goat cheese, and my egg, milk and sour cream mixture. They bake for about 10 minutes at 400 degrees. As you can see, this is a pretty adorable snack, or breakfast, or lunch.
