Mini Pasta Frittatas

Do you have friends with chickens? You should. It's really nice. They bring you fresh eggs that are golden and delicious (and this is coming from an egg hater). All you have to do is listen to their chicken stories, which are pretty entertaining, and give them empty egg cartons and they refill them for you. It's a great arrangement.

Last week, when I had leftover pasta, I decided to use these fresh Highland Park eggs and make little frittatas in the muffin tin. You can use whatever you have in the fridge. Here I have roasted peppers, olives, goat cheese, and my egg, milk and sour cream mixture. They bake for about 10 minutes at 400 degrees.  As you can see, this is a pretty adorable snack, or breakfast, or lunch.
