Grilled Chicken Salad

As summer gets under way, dinners in the backyard are the perfect way to end an evening. Especially if you have a gin and tonic in hand and pretty sunflowers to keep you company.

This salad was easy to throw together -- romaine lettuce, pistachios, yellow raisins, black olives and cucumbers. I made a quick marinade for the chicken breasts with garlic, ginger, lime juice, lemongrass and grape seed oil, with a good amount of salt and pepper of course. After 30 minutes, we grilled the chicken, sliced it and topped our salad with it. The marinade, though simple, packed a lot of fresh flavor, perfect for a summer salad.
